
Lazy honey cake with cottage cheese and sour cream filling
Description
The secret of a lazy honey cake is that you don't need to roll out thin layers. You just need to bake two thick sponge cakes and carefully slice them into thinner layers. This is a very quick recipe, because while the layers are baking, you can prepare the frosting (simply mix sugar, cottage cheese, and sour cream with a mixer). For decorating the cake, I recommend using chocolate, honey, and cookie or cake crumbs. It will look beautiful and taste delicious. Serve with tea or coffee.

1. Prepare the dough: using a mixer, beat the eggs with sugar until fluffy. Add honey and mix well. Sift the flour and combine it with baking soda.

2. Add the flour with baking soda to the beaten eggs, mix with a spatula until smooth. Divide the batter into two parts. Line the baking pans with parchment paper, then spread the batter evenly into them.

3. Bake two cake layers in a preheated oven at 180 degrees for 25 minutes. Let the layers cool completely, then cut each one into 5 pieces.

4. Prepare the cream: beat sour cream, sugar, and cottage cheese with a mixer until smooth. Assemble the cake: spread each layer with cream and stack them on top of one another. Spread the cream over the sides and top of the cake as well.

5. Place the cake in the refrigerator for 10 minutes. To create a honeycomb decoration, melt the white chocolate and pour it onto a bubble wrap packet. Put the packet in the refrigerator for 15 minutes.

6. Place the chocolate in a honeycomb pattern on the cake, drizzle with honey, and sprinkle the sides with crumbs from the cake tops. Refrigerate the cake overnight.
