
Lazy honey cake
Description
Delicious pastry for the whole family. Using a cream thickener is optional, but without it, the sour cream with sugar will become runny and won't hold its shape. Keep an eye on the baking cake layer— the dough is light and tender, baking in just a few minutes. As soon as the top turns golden brown, take it out and check for doneness with a toothpick. Everything is easy and quick, good luck! Can be served with tea or coffee.

First, prepare the ingredients for the sponge cake. You will need one and a half cups of flour, two eggs, three tablespoons of sugar, three tablespoons of honey, and baking powder. You can also add vanilla flavoring.

Beat the eggs with a mixer together with sugar until a fluffy light mass forms.

Pour in the honey and beat the mixture again.

Add the flour with the baking powder and use a mixer to make the mixture smooth and homogeneous, without lumps.

Line a baking sheet with parchment paper and grease it well with cooking fat or refined oil. Pour in the batter and smooth it out. Bake the sponge cake at 180°C for 10-15 minutes. Keep an eye on it—mine was ready in just 9 minutes!

The honey cake sponge is ready! Carefully remove it from the pan together with the parchment paper and let it cool.

For the cream, you will need 20% fat sour cream, sugar (3 tbsp), 15 g cream thickener, and vanilla flavoring (optional).

Add sugar and thickener to the sour cream. Beat the mixture with a mixer until it reaches a creamy consistency.

The cream is ready!

Remove the sponge cake from the paper. Cut it into three equal parts. Trim the edges.

Spread each cake layer with cream. Assemble the cake. Also carefully cover the top and sides with cream.

Crumble the leftover cake pieces (I use a coarse grater for this), chop the walnuts with a knife or crush them in a mortar, then use them to coat the honey cake. The lazy medovik is ready! I managed to finish within 35 minutes. However, it's best to let it chill in the refrigerator for a couple more hours.
