
Lazy vareniki or cottage cheese dumplings
Description
The recipe won't take much time. Children really love "lazy" vareniki. This dish is frequently prepared by moms and grandmas. They contain a high amount of protein, calcium, and carbohydrates. Serve hot.

1. Pass the cottage cheese through a meat grinder or rub it through a sieve. If there is little cottage cheese, you can use a potato masher, which works perfectly to make the curd mass smooth. Add soft butter, egg, and salt to the mixture.

2. Mix, add flour and vanilla. Knead a fairly sticky, soft dough, cover with a towel or cloth. Let it sit in the refrigerator for ten to fifteen minutes.

3. Divide it into several portions, sprinkle the table with flour, and roll each portion into a sausage shape approximately two to three centimeters thick. Use enough flour so the dough doesn't stick to the table.

4. Cut the sausages diagonally into small pieces, about the thickness of a finger. The pieces can be slightly flattened.

5. Bring water to a boil in a pot or saucepan, add salt, then drop in the pieces of dough and cook, stirring occasionally to prevent sticking. Cook until the dumplings float to the surface. Reduce the heat and continue cooking for another five minutes. Place the cooked dumplings onto a plate and top with sour cream. You can also add a little butter if desired.
