Place the cottage cheese and egg in a bowl. Add salt and sugar. If you're using homemade cottage cheese, it's best to press it through a sieve or simply mash it thoroughly to avoid large lumps.

Now you can put the pot of water on the stove to boil the dumplings. Mix everything thoroughly until a homogeneous mass is obtained.

Add the flour. I take the flour with a tablespoon, like this, with a heap.

The amount of flour may be slightly more or less—it depends on how liquid your cottage cheese is. Homemade cottage cheese is always drier, so you'll need about half a spoon less flour.

And mix everything thoroughly. The dough will turn out soft and sticky.

Sprinkle the table with flour and shape the dough into two sausages, about 1.5 cm in diameter. I slightly flatten the sausage so that the dumplings turn out oval rather than round.
