
Cream puffs with cottage cheese filling

The recipe won't take much time. "Lazy" eclairs, or as they're called in America, popovers, are a perfect solution for those who struggle with traditional classic eclairs. Plus, classic ones require more effort, don't they? I'll show you how to quickly, easily, and simply make equally delicious "lazy" eclairs with a cottage cheese filling. Try them, and I think you'll love them :) Serve with tea or coffee.

1. First, turn on the oven and let it heat up to 230 degrees. Start preparing the dough. We'll need warm milk, heated to about 30 degrees. Melt the butter, but make sure it's not hot. Crack the eggs into a bowl and beat them with salt.

2. Add the melted butter and half of the milk. Mix until smooth.

3. Add the flour and mix until smooth; the dough should not have lumps.

4. And now add the remaining milk. Stir.

5. The dough turns out to be liquid, like pancake batter. I mixed everything with a whisk, but you can also use a mixer.

6. Pour the batter into cupcake molds; we will need 12 of them. Fill the molds a little more than halfway.

7. Place in the oven. Bake for 15 minutes at 230°C, then for another 15 minutes at 160°C. Keep an eye on the baking, as ovens vary, and under no circumstances should you open the oven during baking! Remove the baked eclairs from the pan and let them cool.

8. Prepare the filling. Whip the cream with powdered sugar, vanilla sugar, and lemon juice until fluffy and stiff peaks form.

9. Add the ricotta or cottage cheese passed through a sieve and beat until smooth.

10. I had some grated chocolate, so I decided to add it to the filling as well. You can also add small sweet berries—blueberries, strawberries. Mix well.

11. Cut the cooled "lazy" eclairs near the top to make a lid.

13. And on top, you can simply sprinkle with powdered sugar or cover with melted chocolate, sugar glaze—it's up to you :)
