
Lazy Potato Pancakes

This recipe won't take much time. I'll say right away that regular draniki and lazy draniki taste absolutely the same. However, regular draniki involve much more hassle, they take longer to prepare, and time is scarce these days, so if we don't know how to make lazy draniki yet, we'd better learn :) The appetizer is ready. Serve immediately.

Peel and grate the onion, garlic, and potatoes on a coarse grater. Season with pepper and salt, add flour, and beat in an egg. Mix everything well and pour in enough milk to make a batter of medium thickness.

Place the batter on a hot skillet (cast iron works best), spread it into a pancake with a spoon, then cover with a lid and reduce the heat to the lowest setting. After a while, carefully flip the pancake with a spatula. When the pancake is done, transfer it to a paper towel.

Serve the blin on a communal platter so that everyone can cut off the piece they need. Don't forget the sour cream or another sauce.
