
Lazy vatrushka with cottage cheese
Description
When choosing cottage cheese for the pie, prefer a less moist, less sour product. When spreading the filling on the dough, start from the center and gradually work toward the edges of the vatrushka. That way the pie will turn out evenly shaped, resembling a vatrushka. Serve cooled or slightly warm.

Prepare the necessary ingredients.

Prepare the dough for vatrushka. In a bowl, mix 2 eggs, 100 grams of sugar, vanillin, and a pinch of salt.

Add sour cream. Stir.

Add the flour and baking powder. Mix.

Add vegetable oil to the dough and mix well again.

Prepare the filling. In a bowl, mix cottage cheese, 100 grams of sugar, 2 eggs, semolina, salt, and vanilla to taste.

Blend with an immersion blender until smooth.

Grease the baking pan with butter. Pour the prepared batter into it.

Starting from the centre, use a spoon to spread the filling. Smooth it gently over the dough, leaving a rim. Place in an oven preheated to 180°C for 35–40 minutes. Adjust for your oven’s behaviour.

After the specified time, check whether the vatrushka is done. The filling should be springy; pierce the dough with a wooden skewer—it should come out dry. Cool the finished pie in the pan.
