Description

Perfectly pairs with tea and coffee. Making achma is not difficult, and the aroma filling your home while it's being prepared is so enticing that you'll want to taste it right away! You'll need lavash and a cheesy filling, which you'll layer alternately in a baking dish. Try it sooner rather than later! Serve warm or chilled. Ideal with tea.

    How to prepare lazy achma? First, take lavash. Trim it to fit the shape of your baking dish.

    I'm making half the portion, but the ingredients are listed for a full one. So, crack the eggs into a bowl. Add salt and pepper, and whisk.

    Pour in the milk and blend again. Do not aim for a fluffy foam; just mix everything well.

    Add grated hard cheese and feta cheese to the mixture. Season with salt to taste and press in the garlic.

    Mix well. Instead of feta, you can use suluguni or another type of cheese. You can also use two varieties of hard cheese. I do not recommend using cottage cheese—it will result in a completely different dish.

    Line the pan with parchment paper. Place a sheet of lavash, trimmed to fit the shape, on a sheet of paper. Put 2-3 tablespoons of the cheese and egg mixture on top.

    Spread the cheese mixture evenly over the entire sheet of lavash. Cover with a new sheet of lavash, then add another layer of cheese mixture, and another sheet of lavash. Continue layering this way until the top. The final layer should be cheese.

    Preheat the oven to 200 degrees. Bake the lazy achma in the oven. Baking time is about 20 minutes. The achma will puff up and rise. This is normal. After cooling, it will collapse and become denser.

    Remove the achma from the paper. Transfer it to a plate, slice, and serve.
