Description

The recipe won't take much time. I searched for a long time for the authentic Leningrad cake recipe according to GOST standards. I tried various versions... And finally, my long search and experiments ended in a grand success, earning praise and admiration from my family. Making this cake will require some effort, but believe me: it's worth it. The cake will be the highlight of your festive table, especially if decorated with nuts and cream. Serve it warm or chilled. Perfect with tea.

    Step 1

    To prepare the dough, I used a food processor. Put the margarine, sugar, eggs, and egg yolk into the food processor and mix until smooth. Sift the flour with baking powder and add it to the processor bowl, then mix for 15 seconds. This time is sufficient for the dough to become soft, smooth, uniform, elastic, and pliable. Refrigerate the dough for 30 minutes.

    Now take parchment paper and cut 5 pieces measuring 24 by 24. Place a piece of dough on the table, flatten it with your fingers, shaping it into a square. Place parchment paper on top and roll it out. Do not trim the edges of the dough; instead, press them down onto the dough and roll again. Set the dough sheet aside together with the parchment. Roll out the remaining layers in the same way. Now you can start baking. Place one dough layer at a time (together with the parchment) into the oven and bake for 20 minutes.

    While the cake layers are baking, you can start preparing the frosting. In a bowl, mix butter, powdered sugar, 2 tablespoons of cocoa powder, and a can of condensed milk. Mix everything very thoroughly, or better yet, beat with a mixer. The frosting is ready—place it in the refrigerator to firm up slightly.

    The icing is easy to prepare. With a whisk, beat the egg white, then add 3 tablespoons of cocoa powder, powdered sugar, and a spoonful of cold water. The consistency should be smooth and slightly stretchy.

    Remove the cake layers from the oven and let them cool. Then spread each layer with cream, pour the icing over the top, and refrigerate the cake for at least 3 hours, or preferably overnight.
