
Leningrad Puffs
Description
Homemade baked goods for tea. I'll tell you, Serve cooled or slightly warm.

Prepare all the ingredients.

In a deep bowl, combine the flour, yeast, salt, and sugar.

In another bowl, combine warm water, softened butter, and eggs.

Combine the contents of both bowls and knead the dough. If the dough seems too runny, add another 1–2 tbsp of flour. Do not give in to the temptation to keep adding flour! The dough should be soft and sufficiently sticky, otherwise it will lose its porosity and lightness. Gather the dough into a ball, coat it with butter, cover, and let it rest in a warm place for about 1 hour.

When the dough is ready to work with, grease the work surface and your hands with vegetable oil. Without wetting the dough, immediately pinch off pieces about the size of a slightly larger walnut and shape them into balls. Make an indentation in the middle with your finger, thus cutting all the dough. I got 20 pieces.

Heat the oil well (in a cauldron or any other convenient vessel), take one piece of dough in your hand and, with your fingers, make a hole in the middle, stretching it to a diameter of about 6–7 cm. Then immediately place it in the hot oil. If there is still room, repeat the process. I fried two puffs at a time. The process is very quick, so I don’t recommend getting distracted for long.

Place the finished buns on a paper towel, then transfer them to a plate and serve.

If desired, sprinkle the buns with powdered sugar.
