
Lamington
Description
The pastry is simple and quick to prepare. Lamington is an Australian treat named after Baron Lamington, the Governor of Queensland. Lamingtons are dearly loved by Australians—and for good reason. They can be served with tea or coffee.

1. Preheat the oven to 180 degrees. Grease the baking pan and line it with parchment paper.

2. Sift the wheat and corn flour and mix together. Set aside. Mix 25g of butter and 80ml of hot water, and let the butter melt.

3. Place the eggs in a large bowl and beat with a mixer. Beat at the highest speed for approximately 4 minutes.

4. Gradually add sugar and beat until the mixture thickens and doubles in volume (approximately 8 minutes). Gradually add the sifted flour and gently mix. Then add the reserved butter and water mixture.

5. Pour the batter into a baking pan. Bake for about 20–25 minutes. Do not open the oven, otherwise the batter may collapse. Remove the cake and let it sit for 4 minutes. Carefully remove the cake from the pan and place it onto a clean kitchen towel. Let it cool slightly. Using a kitchen knife, cut the cake into 9 equal pieces.

6. Prepare the icing. Melt the butter in hot water. Add cocoa powder and mix thoroughly, making sure there are no lumps. Add powdered sugar and stir using a whisk.

7. Take a piece of cake, dip it on all sides in the glaze, then in the coconut flakes. Serve lamingtons with tea.
