Description
Perfectly pairs with tea and coffee. Lekeah is easy to prepare. The most challenging part of the cake is preparing the masala chai mix. I highly recommend searching for and buying a ready-made one. Otherwise, it's simple—mix the ingredients for the batter, pour into a pan, and bake for about an hour at 180 degrees. Good luck! Serve with tea or coffee.

Step 1

1. First, brew a glass of strong Assam tea and set it aside to cool. If you couldn't find masala tea blend available for purchase, you'll have to make it yourself. To do this, dry roast cardamom pods, cinnamon, pepper, and cloves in a skillet over medium-high heat for 4–5 minutes. Then transfer to a mortar, mix with powdered spices, and grind thoroughly with a pestle.

2. Prepare the dough for lekach. To do this, sift the flour into a large bowl, add baking soda, baking powder, spices, and salt.

3. Then add vanilla, white and brown sugar, vegetable oil, and honey to the bowl with flour. Add the eggs, pour in the tea and orange juice. Wash the apple, peel it, remove the core, finely chop or grate it, and add it to the dough as well. Mix well.

4. Grease the baking dish with oil or line it with parchment paper, then pour the batter into it. I ended up filling one large dish and one small dish. Bake the lekach in a preheated oven at 180 degrees Celsius for one hour (place the small dish in the oven for 50 minutes). Check for doneness with a wooden toothpick.
