Light coconut cookies with nuts and chocolate
Description
Perfect with tea and coffee. Light and delicious cookies that you can make without getting tired at all! The only downside is that they need to dry for quite a long time, but you can just put them in the oven in the evening and enjoy them in the morning—the wait won't feel so long :) In the original recipe, the other ingredients were required in twice the amount per egg white compared to what I've indicated here. However, I wanted a more delicate cookie, so you can try making both versions :) The baked goods are ready. Serve and enjoy.

Step 1

1. Just a small amount of ingredients makes 15-16 delicious cookies. Turn on the oven and let it preheat to 200 degrees.
- 2
Step 2

2. Chop the nuts; if you're using regular chocolate instead of chocolate chips like I am, chop it with a knife into small pieces.
- 3
Step 3

3. Mix the coconut flakes, chocolate, and nuts.
- 4
Step 4

4. Beat the egg white until soft peaks form.
- 5
Step 5

5. Then, gradually adding sugar in parts, beat until stiff peaks form.
- 6
Step 6

6. Add the mixture of nuts, chocolate, and coconut flakes to the whipped egg whites.
- 7
Step 7

7. And gently mix.

Step 8

8. Now, spoon small portions (it's very convenient to use an ice cream scoop) onto a baking sheet lined with parchment paper.

Step 9

9. Place the baking sheet with the cookies in the preheated oven for 1 minute, then turn off the oven. Leave the cookies in the closed oven for 3 hours. The cookies are ready! Enjoy!
