
Light chocolate mousse
Description
The dish is prepared without unnecessary complications. Here is a simple recipe for quick chocolate mousse. You just need to be careful at the final stage, when mixing the melted chocolate and beaten egg whites. The finished dessert can be served immediately.

Break the chocolate into small pieces and place in a saucepan, then melt over very low heat or in a double boiler. Stir with a spatula while melting. Remove from heat before the chocolate has completely melted, and continue stirring until fully melted.

Add 60 g of butter cut into small pieces, continue stirring until you obtain a smooth, glossy chocolate.

Add 2 egg yolks and continue stirring until fully incorporated. Let cool for a few minutes. Do this so it is not too hot when adding the whipped egg whites.

Whip 3 egg whites with a pinch of salt and ½ teaspoon of lemon juice. In the middle, add 2 tablespoons of powdered sugar. Then take about 2 tablespoons of the whipped whites and start incorporating them into the chocolate. Mix.
