Light strawberry mousse

Description

Among strawberry desserts, this mousse is one of the lowest in calories. It can be served at the end of a meal or as a healthy snack for children. You can also prepare this mousse with other berries: blackberries, raspberries, blueberries, or cherries. For garnish, use chocolate shavings, powdered sugar, or meringue crumbs.

    1. Soak the gelatin sheets in cold water and leave for 10 minutes.

    2. Wash the strawberries, clean them, cut into pieces, place in a saucepan and sprinkle with sugar.

    3. Simmer over low heat for 5 minutes, gently stirring with a wooden spoon. The strawberries should release plenty of juice but not become completely mushy. Remove the strawberries from the heat and let cool to room temperature.

    4. Squeeze the gelatin to remove excess water, add 2 tbsp of yogurt.

    5. Heat in the microwave for a few seconds (or warm on the stove over low heat) until the gelatin dissolves. Stir well to ensure there are no lumps.

    6. Transfer the gelatin mixture and the remaining yogurt into a tall glass and blend with an immersion blender until foamy and mousse-like in consistency.
