
Easy homemade mayonnaise

Separate the yolks from the whites by cracking the eggs over a bowl. Place the yolks in the bowl of a food processor and add salt.

Beat them for 3-4 minutes until the mixture turns pale. This must be done thoroughly, as oil will not incorporate into poorly beaten egg yolks!

Slowly start pouring in the vegetable oil in a thin stream, continuing to whisk the sauce. It must be a thin stream, otherwise you'll end up with a runny mixture! It will take about 5 minutes for the oil to incorporate into the mixture and form mayonnaise.
