
Light baklava
Description
Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a baking pan. Mix cinnamon and nuts. Unroll the puff pastry and cut it in half to fit the size of the pan. Cover the pastry with a damp cloth to prevent drying. Place two sheets of puff pastry into the prepared pan. Generously brush with butter. Sprinkle with 2–3 tablespoons of the nut mixture. Repeat the layers until all ingredients are used, ending with about the 6th sheet of pastry. Using a sharp knife, cut the baklava into four long rows, then diagonally. Bake in the preheated oven for 50 minutes, until golden brown and crispy. While the baklava is baking, combine sugar and water in a small saucepan over medium heat and bring to a boil. Add honey, vanilla, and lemon zest, reduce heat, and simmer for 20 minutes. Remove baklava from the oven and immediately spoon the syrup over it. Let cool completely before serving.
