Description

The dish is prepared without unnecessary complications. At first glance, it may seem that the process of making sugar-free candies is long and labor-intensive. I assure you this is not the case. The most time-consuming part of the entire process is reducing the syrup. It's important to note that you must be extremely careful when cooking the syrup. The finished dessert can now be served.

In a small stainless steel saucepan, pour boiling water over the herbs and spices. Simmer over low heat for about 7 minutes. Remove from heat and let the decoction steep, covered, for 30 minutes. Then strain the resulting decoction. Discard the herbs.

Be extremely careful during cooking. The mixture bubbles vigorously, so keep the heat at a minimum. In total, cooking will take 35-40 minutes.

To check if the candies are ready, take a glass, chill it in the freezer for a while, and drop a bit of the reduced syrup onto the inverted bottom of the glass. If the drop does not spread, holds its shape well, and hardens, the candies are ready to be poured into molds.

Silicone molds can be used for making the candies, but if you don't have any, you can use a plastic container and starch. Pour a thick layer of starch into the plastic container. Use your finger to make indentations spaced slightly apart. Into these indentations, drop the prepared honey-herbal syrup. Adjust the diameter as desired, but do not exceed the edges of the indentations, as the syrup will spread. If the syrup hardens during the process, reheat it slightly and continue pouring the candies.

Sprinkle the filled mold with starch on top and let it sit for 30 minutes. Then roll the candies in starch, transfer them to an airtight container or wrap them in wax paper. Store the candies in a cool place, sprinkling them with starch periodically.
