
Lecho with carrots
Description
Homemade preserves keep well for a long time. To make carrot lecho at home, choose only sweet and juicy peppers. Lecho is an excellent appetizer to go with all kinds of dishes. In one large container: remove the seeds from the peppers and cut them into strips, slice the onion into half-moons, grate the carrot. Season everything with salt and pepper, and add vegetable oil, sugar, vinegar, and tomato juice.

Put the vegetables on to cook over low heat. Cook for half an hour, stirring occasionally.

Pack the finished lecho into sterilized jars. Seal tightly, turn the jars upside down, and leave them until completely cool.
