Tomato Lecho

Description
Perfect for winter pantry stocks. This lecho recipe is traditional and time-tested. But if you like, you can add hot chili for extra heat, or even make lecho from hot peppers. Jars keep for up to a year in a cool place.

1. Cut the tomatoes into wedges. You can remove the skin beforehand by blanching them and placing them in cold water.

2. Remove the seeds from the peppers and cut them into strips.

3. Put half the tomatoes, pepper, and garlic passed through a press into the pot.

4. Cook over medium heat for 10 minutes.

5. Add the remaining tomatoes and cook for about 30 minutes. Add salt and sugar.

6. Pack into sterilized jars and seal with boiled lids. Sterilization is not required. Store in a cool place.
