
Pepper Lecho
Description
Winter preserve made at home. You will get about 6 liters of the most delicious lecho! This pepper lecho recipe is very simple—even if you are making lecho for the first time, you are sure to succeed. I recommend using peppers of different colors when making lecho. In winter, not only your stomach but also your eyes will be delighted.

Step 1

1. Prepare tomato pulp or tomato juice. To do this, peel the tomatoes and remove the stems (after blanching them in boiling water), run them through a meat grinder or chop in a blender. Place over medium heat, add seasonings, and bring to a boil.

2. Wash and clean the bell pepper; cut into medium julienne strips.

3. Add the bell pepper to the tomato mixture with the spices and simmer for 35–40 minutes.

4. Pour the lecho into pre-sterilized jars, seal them, and wrap in a blanket. Store the cooled jars of pepper lecho in a dark, cool place.
