Instructions

Step 1
Let's work on the sauce. First, peel all the vegetables and chop the onion, carrot, and celery.

Step 2
Pour a small amount of olive oil into a hot skillet, mix the beef and pork mince, and start frying with spices. Then add the chopped vegetables and pancetta. Simmer until the meat turns light in color, which will take about 25-30 minutes.

Step 3
Next, add the wine to the pan and bring the mixture to a boil. After a couple of minutes, add some milk, reduce the heat, and cook until the liquid has evaporated, about 9–10 minutes.

Step 4
Add the chopped tomatoes and chicken broth to the skillet, bring back to a boil, adding water if needed. Simmer for 30-45 minutes, then let the Bolognese cool.

Step 5
Let's work on the dough. To prepare it, mix the flour and salt, make a well in the center, and crack the eggs into it. Knead gently until the dough no longer sticks to your hands. Wrap it in plastic and refrigerate for a couple of hours.

Step 6
Form the pasta for lasagna by cutting and rolling out the dough. Prepare the béchamel sauce. To do this, heat butter in a skillet, add flour, and mix thoroughly to avoid lumps. Gradually add milk to the sauce, stirring constantly, then add salt and nutmeg. The béchamel sauce should reach a creamy consistency.

Step 7
The ready pasta dough needs to be boiled in salted boiling water for 10 seconds. Now we proceed to assembling the lasagna.
- 8
Step 8
Preheat the oven to 180 degrees. Grease the baking dish with oil. Spread béchamel sauce over the bottom of the dish, then place a lasagna sheet and cover it with Bolognese sauce. Repeat these steps until all ingredients are used up. Pour the remaining béchamel sauce over the top layer and sprinkle with grated Parmesan.

Step 9
Place the lasagna in the oven for 50-60 minutes. Lasagna with béchamel sauce is ready.
