
Lasagna with soy mince

Prepare all the ingredients.

Pour boiling water over the soy pieces and let them sit for 10–15 minutes. Then rinse under cold water and squeeze dry. Grind the textured soy using a meat grinder with a coarse attachment to form a mince.

Finely chop the onion with a knife and fry in a pan until soft.

Add the soy mince, season with spices and soy sauce. Mix well and cook until excess liquid has evaporated and a golden crust forms, stirring constantly.

For the tomato sauce, pour the chopped tomatoes into a saucepan, add 1 tbsp olive oil and tomato paste. Simmer the sauce over medium heat until thickened, stirring constantly. At the end, season with salt to taste.

Blend cashews with nutritional yeast, salt to taste, and starch until smooth. Pour into a saucepan and cook over medium heat until thickened. The sauce should have a consistency similar to béchamel; do not reduce it too much.

Grease the baking dish with oil, add a little cashew sauce to the bottom, and 1/3 of the tomato sauce.

Place the lasagna sheets on top. If they don't fit completely into the dish, you can break them to the required size.

On top, pour a little cashew sauce and spread half of the soy mince. Then add a bit more cashew sauce and the second layer of lasagna sheets. Repeat the same for the second layer, but add the second half of the tomato sauce as well.

Completely cover the top layers of lasagna with cashew sauce. Bake the lasagna in the oven for 35-37 minutes at 185 degrees.
