Lasagna with chicken, mushrooms, and spinach

Description

The recipe won't take much time. Lasagna is an incredibly delicious, appetizing, and filling dish, perfect for feeding the whole family. The chicken lasagna recipe allows using either store-bought lasagna sheets or homemade pasta. If you're using store-bought sheets, carefully read the instructions before cooking, as some types need to be pre-cooked. Serve hot.

    1. Preheat the oven to 230 degrees. Heat a small skillet over medium-high heat. Add vegetable oil and place chicken breasts skin-side down. Cook without flipping until browned, about 5 minutes. Turn the chicken over and transfer the skillet to the oven. Bake until a meat thermometer inserted into the thickest part of the chicken reads 71 degrees. The chicken is done when the juices run clear. Remove the skillet from the oven and let the chicken cool. Once cooled, remove the meat from the bones and shred. Reduce the oven temperature to 190 degrees.

    2. Prepare the sauce. Melt the butter in a large saucepan over medium heat. Add the thinly sliced mushrooms and cook, stirring frequently, until the liquid evaporates and the mushrooms are lightly browned, 5 to 7 minutes. Add the onion and cook until soft, 3 to 4 minutes. Add the minced garlic and cook for about 30 seconds, until fragrant. Stir in the flour and cook, stirring with a wooden spoon, for about 1 minute.

    3. Gradually add the milk, whisk with a whisk and continue cooking, stirring, until the sauce thickens, about 5 minutes. Add ¾ teaspoon salt, black pepper, nutmeg, spinach cut into 8 mm strips, and 1¼ cups grated Parmesan cheese. Cook, stirring, until the sauce thickens, about 2 minutes. Then add the chicken meat. Add more salt to the sauce if necessary. Turn off the heat and cover the pot with plastic wrap until you are ready to assemble the lasagna.

    4. Spray a 22x32 cm baking dish with cooking spray. Pour about ¼ cup of sauce onto the bottom of the dish, making sure no large pieces of chicken are in the sauce. Place lasagna sheets on top. Alternate layers of sauce and sheets to create about 4 layers.

    5. Pour the remaining sauce over the lasagna and sprinkle with the remaining Parmesan cheese. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and continue baking for about 20 minutes, until the sauce begins to bubble.

    6. Let the lasagna stand for about 10 minutes. Then cut the lasagna into pieces and serve.
