
Lasagna with sauce
Description
"Bolognese" sauce is an Italian meat sauce traditionally prepared for green lasagna (the dough includes spinach, which gives the sheets their green color) or for pasta dishes. Bolognese makes any dish hearty and adds a rich flavor. "Béchamel" sauce is traditionally served with meat dishes, giving them a mild, creamy taste.

To prepare lasagna, we need to make Bolognese sauce. For this, finely chop the onion. You can dice it with a knife or process it in a blender. Sauté the prepared onion in vegetable oil until soft.

Add the grated carrot to the fried onion. Sauté the carrot with the onion together for about 5 minutes.

Add the minced meat to the fried vegetables. I use homemade minced meat made from pork and beef.

Add a little boiling water to the meat. Simmer the minced meat with vegetables, stirring constantly. While the meat is cooking, prepare the tomatoes. Dice the tomatoes into small cubes (you may optionally peel them beforehand). Add the tomatoes to the meat. Add 2 tablespoons of tomato paste to the meat. Add salt and spices. Simmer over low heat until the sauce becomes soft (20-25 minutes). If necessary, add a little water.

Set aside the ready-made "Bolognese" sauce. Now let's prepare the "Béchamel" sauce. These two sauces are essential for lasagna. So, place 50 grams of butter in a frying pan. Add one tablespoon of dry flour. Mix the melted butter with the flour, sauté, stirring for about 2-3 minutes.

Add the cream or milk to the fried flour. Mix quickly. The flour will dissolve in the cream, and the sauce will become smooth. Now season the sauce with pepper and salt. Be sure to add a little nutmeg to the "Béchamel" sauce.

Lasagna can be prepared in various ways. This dish can be made with lasagna sheets, either homemade or store-bought. It can also be based on matzo, pancakes, or vegetables such as eggplants, zucchinis, or courgettes. There are many possible variations. I prepare this lasagna using matzo as the base. Place the matzo sheets (without soaking) into a greased baking dish. If your matzo sheet is larger than the dish, you can break it into smaller pieces and then arrange them to form a layer.

Place the Bolognese sauce on a layer of matzo. Spread it evenly.

Place a layer of "Béchamel" sauce over the "Bolognese" sauce. Grate hard cheese and sprinkle it on top.

Cover with fresh matzo sheets. Then again add the "Bolognese" sauce, followed by the "Béchamel" sauce....

Assemble the entire lasagna this way. The top layer should be the "Béchamel" sauce.

Sprinkle everything with grated cheese once again.

Bake the lasagna in a preheated oven, uncovered, at 180-200 degrees Celsius for about 20-35 minutes. Cut the cooked lasagna into portions and serve.
