
Lavash lasagna with mushrooms
Description
When I first made this lasagna and served it to my husband, he didn't even realize that lavash was in it. But lavash is essentially dough too—it soaks up the sauce well and turns out wonderfully tender. The mushrooms make the lasagna especially delicious and aromatic. This dish is very filling; although I made just a small amount, the whole family was satisfied, and there was even some left over. Be sure to try it.

Prepare all the necessary ingredients.

First, prepare the filling. Chop one onion into small cubes and place it in a heated skillet with vegetable oil.

Clean the mushrooms and cut them into small cubes. Add to the pan with the onion and fry until cooked.

Transfer the sautéed mushrooms to a plate, and in the same skillet, sauté the second onion, diced.

When the onion turns golden, add the minced meat, mix well to make it crumbly. Add salt, spices to taste, and fry the meat until it is completely light beige in color.

Then pour tomato juice into the pan (you can use tomato paste diluted in a glass of water), mix well and simmer until the juice reduces by half.

Now we start assembling the lasagna. Line a suitably sized dish with a sheet of lavash, letting the edges rise up the sides. Place half of the meat filling on the bottom.

Then line with a piece of lavash.

Place the mushrooms (I reserve some for the final layer), then spread mayonnaise or sour cream on top. You can also pour béchamel sauce, as in the classic version, but mayonnaise is delicious too. Cover again with a sheet of lavash.

Place the remaining meat filling. Be sure to pour in all the liquid; this will make the lasagna very juicy.

Cover everything with a sheet of lavash, place the remaining mushrooms on top, and sprinkle with grated cheese.

Bake the lasagna in the oven for 15-20 minutes; do not overbake, as all ingredients are already cooked. You just need the cheese to melt and the lavash to soak up the sauce well.
