Lavash with Cottage Cheese

Suitable for both holidays and everyday meals. A homemade lavash appetizer with cottage cheese will be indispensable on your lunch table at any time of year.     1. Prepare the main ingredients for the dish. Homemade cheese is best, but if you don’t have any, substitute Adyghe cheese or cottage cheese. You will also need sour cream, salt, garlic, and fresh herbs.

    2. Grate the cheese on a coarse grater, then mix it with the cottage cheese. Mash the resulting mixture thoroughly. I do this with a fork—it’s faster and more convenient. Add minced garlic, but this is optional, although the classic lavash with cottage cheese recipe includes garlic.

    3. To make the dough more pliable, add a little sour cream to it. I used thick sour cream—it works best for this dish. Add the chopped herbs at the very end.

    4. Now roll up the lavash and cut it into small pieces no wider than 20 centimeters. Spread one strip with sour cream, then place the cheese and herb mixture on the lavash and spread it evenly over the entire surface.

    5. Carefully roll the lavash into a roll, gradually adding the filling as you go. You should end up with a tightly rolled roll like this. Don’t add too much filling, or it may spill out past the edges when you slice it. You can make rolls of different diameters. After slicing, put everything in the refrigerator until fully set. Mine rested for about an hour, after which I carefully cut the lavash into portions. Don’t forget to wrap the lavash in plastic wrap.
