Instructions

Step 1

We'll need regular store-bought lavash. I had some Armenian lavash lying around, but any kind will do. If you have the time and inclination, you can even make it yourself. So, take the lavash out of the package.

Step 2

Now we proceed to making the filling. Mash the brynza with a fork. Chop the herbs. The more herbs, the brighter the flavor. Grate the garlic or simply mince it finely and add it to the filling. Beat the eggs and mix everything into a smooth paste.

Step 3

If you have 1 large piece of lavash, cut it into equal portions. You can make the strips larger, or neat smaller ones. Spread the filling on the wide part of the lavash. Fold the lavash cornerwise, from the wide side toward the narrow one.

Step 4

Grease the baking sheet with oil. Preheat the oven to 180°C. Place the rolled lavash snugly side by side in the dish so they don’t unroll. You can drizzle cheese sauce over the top. Bake for 15–20 minutes.

Step 5

After the allotted time, take out the lavash. They have baked through and formed an appetizing crust. The herbs and cheese gave it a unique aroma. Enjoy every bite!
