Sift the flour into a deep bowl.

Add dry yeast, a teaspoon of salt, and a pinch of sugar. Mix the dry ingredients.

Pour in 210 ml of warm water. Knead the dough. Do not add eggs or vegetable oil to the dough. Knead the dough ball very well—really thoroughly. I kneaded it by hand, stretching and folding for about 10 minutes. Place the dough ball into a plastic bag, tie it up, and leave in a warm place for 2 hours.

The dough will double in size, but don't expect it to fill the entire bag.

Divide the dough into balls. You can make the lavash either small or of a decent size. The total amount of dough should be divided into 4 parts. With your fingers, roll out each part into a flat sheet.

Form the edges. Press down the center so that the lavash resembles the shape of a "herring dish" or a boat.

Pierce the center of the shaped lavash with a fork. Brush with a brush dipped in milk and sprinkle with sesame seeds.

Place the lavash on a baking sheet lined with parchment paper. Preheat the oven to 250 degrees. Let the lavash rest for 10 minutes while the oven is heating up. Bake the lavash in the oven for 10 to 15 minutes. The lavash bakes quickly.
