Description
Homemade pastry for tea. Gluten‑free lavash is very easy and simple to prepare at home, it perfectly replaces bread and other baked goods, you can wrap any filling in it and make a tasty shawarma. Serve warm or chilled. Perfect with tea.

Prepare the listed ingredients.

Pour the rice flour into a deep container, add a couple of pinches of salt, and vegetable oil. It is best to use odorless olive or sunflower oil.

Pour in warm water and gently start kneading the dough.

Form a tight ball of dough, leaving a handful of flour for rolling out the pieces. Cover the bowl with a towel or plastic wrap, and let the dough rest for 10 minutes.

Divide the dough ball into three or four pieces and roll each one into a thin round sheet.

Heat a wide pan without oil on the stove, place the dough piece in it and fry for about 1–2 minutes until golden brown spots appear. Flip to the other side.

Fry for a minute and place on a plate, then immediately put the second piece into the pan. Fry over moderate heat, otherwise the flour will burn and the smell will spread throughout the kitchen.

Immediately spray the finished lavash with water and cover it with a towel, otherwise after cooling they will instantly become stale and brittle. It will be impossible to wrap the filling in them. Serve the lavash at the table warm or cooled — according to your taste.
