Description

The dish is prepared without unnecessary complications. The two years I spent in southern Azerbaijan were not in vain—I learned how to cook several very delicious traditional Azerbaijani dishes using authentic recipes. Lavangi is one of them. I haven't been to Azerbaijan for over 10 years, but Azerbaijani dishes still occasionally appear in my home kitchen :) I highly recommend trying to make lavangi—it's truly VERY tasty if you follow the correct recipe. Good luck with your cooking, and the finished dish can now be served.

    First, prepare the ingredients. The walnuts should be crushed, and the onion finely chopped and sautéed.

    Then take our lavashan sheet (these are sour plums dried into sheets; I should note right away that the dish won't work without them), chop it finely with a knife or scissors, and soak in boiling water for 5–10 minutes until softened.

    When softened, rub to a porridge-like consistency and mix with fried onion, walnuts, and clarified butter. The result should be a homogeneous paste.

    Now stuff the chicken with the prepared mixture. Wash the chicken and cut it in half. Place about 80% of the filling inside, then sew it shut with thread. Use the remaining filling to coat the outside of the chicken, and make several shallow cuts in the fillet parts, inserting a little of the stuffing into them.

    Bake for exactly 1 hour at 180 degrees. That's it, the lavangs are ready!
