
Lavender Marshmallows
Description
The recipe won't take much time. Lavender marshmallows are both delicious and beautiful—they bring back my memories of Provence, where I bought a packet of dried lavender flowers to make this marshmallow. Making lavender marshmallows is no more difficult than making regular ones. Follow the step-by-step recipe and enjoy this exquisite treat. Serve chilled.

Prepare the ingredients.

Wash the apples, remove the cores, and bake in the oven or microwave until soft. Baking time depends on the apple variety and the oven.

Grind the lavender flowers in a mortar (or by any other method).

Pour agar-agar into 100 ml of water, mix, and let it steep for about 15-20 minutes.

Puree the baked apples with an immersion blender.

Pass the apples through a sieve, measure out 170 grams of purée.

Beat the egg white into a fluffy foam, add the apple puree to the white, and beat again with the puree.

Place a saucepan with sugar, water, and agar-agar over heat, add crushed lavender flowers, bring to a boil, and boil for 2 minutes.

Remove the sugar syrup from the heat and let it cool slightly (2-3 minutes).

Gradually pour the sugar syrup into the protein-apple mixture in a thin stream, continuing to whisk constantly.

Beat the marshmallow mixture until it thickens; as soon as the mixer whisk leaves distinct, well-defined marks on the surface of the marshmallow mixture, transfer it into a pastry bag.

Pipe the meringue onto parchment paper or a silicone mat. The setting time of the meringue depends on the quality of the agar-agar; my meringue started to set immediately after piping.
