In a bowl, mix 175 ml of water with 1 teaspoon of sugar and the yeast. Let the starter sit covered for an hour at room temperature.

Add flour, the remaining water, salt, oil for the dough, and sugar to the sponge. Knead the dough. Let it also rise in a warm place for 1-1.5 hours. A slightly warm oven or microwave works best.

When the dough has doubled in size, gently press it down, folding the edges toward the center.

Divide the dough into 12 equal parts. Roll them into balls. Let them rest for 5 minutes.

Shape the buns by placing 2 teaspoons of jam in the center of each flatbread. Seal the side edges together in the center. Let the buns rise for another 50 minutes.

Now make the streusel. Rub the flour with sugar and butter. Brush the buns with beaten egg, then sprinkle them with streusel.
