
Soba noodles with salmon and watercress
Description
The recipe won't take much time. This light, healthy dish is perfect for those who care about their health and figure. A bit of buttermilk is added to the noodles to give them a creamy texture. 1. Remove the skin from the salmon. In a skillet over medium heat, bring 5 cm of water and a pinch of salt to a boil. Carefully place the salmon into the water. Simmer gently until cooked through, about 7–8 minutes.

2. Remove from the pan and cool, then break the salmon into large pieces.

3. Meanwhile, bring a large pot of salted water to a boil. Add the soba noodles and cook until tender, about 7 minutes. Drain the noodles in a colander and rinse under cold water.

4. In a large bowl, mix the soba noodles with buttermilk, olive oil, lemon juice, lemon zest, and chopped green onions. Add salt and pepper to taste.

5. Add watercress and pieces of salmon, gently mix. Serve immediately or refrigerate until ready to serve. If desired, squeeze some fresh lemon juice over the dish before serving.
