
Spinach Noodles
Description
The dish is prepared without unnecessary complications. Spinach noodles can easily be made at home. Homemade spinach noodles look very unusual thanks to their beautiful emerald color. If you can't find special pasta flour, it's not a problem—you can prepare it from regular flour in the same proportions, or use semolina, but only made from hard wheat varieties. Making the noodles is very simple; details are in the step-by-step recipe. The finished dish can be served at the table.

Prepare the ingredients.

Wash the spinach, dry with a paper towel, trim the stem ends, leaving 1.2–2 cm. Cut into large pieces, place in a blender, add the eggs and vegetable oil, then blend into a suspension.

Add both types of flour and salt to the resulting mixture. Knead the dough.

The dough should be firm enough; if necessary, add more flour.

Sprinkle the work surface with semolina (you can use semolina made from hard wheat only). Place the dough on it, and for convenience, divide it into 2 parts.

Roll out the dough into a very thin sheet.

Roll the dough into a log to prevent it from sticking, and lightly dust it with semolina (semolina flour).

Using a sharp knife, cut the dough into thin strips.

Take 7-8 strips of noodles, shake them lightly, and roll into "nests". Try to make the "nests" loose enough so that the noodles can air out and dry properly.
