
Lampredotto
Description
The simmering time for tripe with vegetables will depend on how you cooked it at the very beginning. To help the filling stay in place better, you can slightly press down the crumb of the bottom bun to form a small well. For juiciness, you can lightly moisten the top bun with broth.

Prepare all the necessary ingredients for making lampredotto. Wash and dry the vegetables.

Pour vegetable oil into a skillet and heat over medium heat. Dice the onion, carrot, and celery into small cubes and add them to the skillet. Sauté the vegetables for 7 minutes, stirring.

Peel the tomato, dice into small cubes, and add to the sautéed vegetables.

Cut the boiled tripe into thin, short strips and add to the skillet. Season everything with salt and pepper.

Cover the skillet with a lid and simmer everything over low heat for 1–1.5 hours until the desired tenderness.

Prepare the sauce. To do this, place the boiled egg, capers, garlic, parsley, and bun into the blender bowl, then pour in the wine vinegar and olive oil. Blend everything until smooth.

Cut the round bun in half lengthwise. Place the stewed tripe with vegetables on the bottom half, then add the sauce and cover with the top half of the bun.
