Cheesy treat with cottage cheese
Description
Perfectly pairs with tea and coffee. For the cookies, you'll need homemade cottage cheese, good quality butter, a little sugar, raisins (light or dark), and flour. Additionally, for the sugary crust, you'll need half an egg and a bit of sugar. Cookie size is up to your preference—my mom used to make them big, shaping them with a small glass. I prefer them small. These cottage cheese treats are a wonderful dessert with a glass of milk or cocoa. Give them a try! They can be served with tea or coffee.
Instructions
- 1
Step 1

Prepare the ingredients. Let's get started!
- 2
Step 2

Place the cottage cheese, cold butter, and sugar (almost all of it, leaving 1 tablespoon for sprinkling the cookies) into the blender container.
- 3
Step 3

Turn on the food processor for a couple of minutes to thoroughly combine the cottage cheese with the butter. If you don't have a powerful food processor, grate the butter on a grater and mix it with the cottage cheese using a fork.
- 4
Step 4

Add the flour in portions (2-2.5 cups), mixing until a dense dough begins to form. Reserve some flour for dusting the table.
- 5
Step 5

The cookie dough is almost ready.
- 6
Step 6

Transfer it to a deep bowl or work surface, add the raisins, and thoroughly mix them into the dough.
- 7
Step 7

The cookie dough is ready! It's time to preheat the oven to 200 degrees. Line the baking sheets with parchment paper.
- 8
Step 8

Roll out the dough to a thickness of 6-7 mm. Use a cookie cutter to cut out shapes and place them on a baking sheet. The size of the cookies is up to you; I prefer small, one-bite cookies.
- 9
Step 9

Place the cookies a small distance apart; they won't spread.
- 10
Step 10

Brush the cookies with beaten egg; half an egg is quite enough. Sprinkle with sugar. Place on the middle rack of the oven and bake for 20 minutes.
- 11
Step 11

The cookies are ready.
- 12
Step 12

Cool the cookies and enjoy! Yield: 80 pieces.
- 13
Step 13

Remove from the oven and serve warm or cooled.
