
Lime pie with blackberry sauce
Description
Homemade baked goods for tea. Recipe for a cake with yogurt, lime juice and zest, and a sauce made from blackberries, water, and sugar. Instead of blackberries in the sauce, you can also use raspberries or strawberries. Serve with tea or coffee.

Step 1

1. Make the cake. Preheat the oven to 175 degrees. Grease a round cake pan with butter and line it with parchment paper. In a large bowl, mix together yogurt, vegetable oil, sugar, lime zest, and juice. Add eggs one at a time, beating well after each addition. Sift flour, baking powder, baking soda, and salt together directly over the wet mixture. Stir with a spoon.

2. Pour the batter into the prepared pan and bake for 35–40 minutes, until the top is golden brown. Let the cake cool in the pan for 10 minutes. Using a knife, remove the cake from the pan onto a serving plate. If using a springform pan, release the sides. Otherwise, invert the cake onto a plate, then turn it again onto the serving dish. Serve slightly warm or at room temperature.

3. Make a blackberry sauce. Combine blackberries, water, sugar, and lime juice in a blender or food processor. Blend until smooth, forming a purée.

4. Then strain through a sieve, removing the seeds. Cover with a lid and place in the refrigerator to chill.

5. This pie keeps well for up to three days, so you can prepare it in advance, wrap it in plastic, and store it at room temperature. The sauce can also be made ahead of time up to 3 days in advance, and can be frozen for future use.
