
Lagman with chickpeas
Description
The recipe won't take much time. Cooking lagman is a slow process; it's very important that all the ingredients are well cooked. Therefore, be sure to taste the beef and chickpeas before adding the vegetables. If they are still a bit tough, cook them a little longer. You can replace rutabaga with green radish or omit it altogether—choose according to your taste. Serve hot.

Prepare the necessary ingredients.

Soak the chickpeas. It's best to do this the night before.

Prepare the vegetables. The cutting can be arbitrary, but large. Slice the onion into strips, and the carrots into thick julienne.

Cut the potatoes and turnips into large cubes.

Peel the tomato and cut it into large cubes.

Heat vegetable oil in a casserole dish or a small cauldron until smoking. Add the onion and carrot. Fry, stirring, until lightly browned.

Remove the fried onion and carrots from the skillet.

Place the sliced meat into the skillet. If there is no oil left after frying the vegetables, add a couple of tablespoons. Fry the beef, stirring occasionally, until the liquid has evaporated.

When the liquid in the pan with the meat has evaporated, add the chickpeas. Season with salt and add black pepper to taste.

Pour in 3 cups of hot water. Place over medium heat. Simmer, covered, for 40 minutes.

After the time has elapsed, add potatoes, turnips, fried onions and carrots, and bay leaf to the skillet. Pour in another 3 tablespoons of hot water. Simmer covered for 30 minutes over slightly below medium heat.

Dilute the tomato paste in a glass of hot water. After 30 minutes, add the diluted tomato paste, noodles, and tomato. Stir gently. Cover with a lid and cook for another 10 minutes.
