
Tajik-style Laghman
Description
Lagman is a dish from Central Asian cuisine, whose regional variations differ not only in ingredients but also in the way the noodles are prepared. Today, I will be cooking traditional Tajik lagman. You can make the noodles yourself or buy ready-made ones from the store. Beef or lamb work perfectly as the meat component. Actually, the recipe is quite simple, yet the result is excellent! You can confidently serve this dish even at a festive table.

Prepare all the ingredients. Soak the chickpeas in boiling water in advance and leave for 5-6 hours.

Cut the beef into small pieces.

Heat the oil in a cauldron, add the pieces of meat, season with salt, and sear over high heat until a light brown crust forms.

Add the onion and carrot cut into thin strips. Fry everything together, stirring occasionally, for about 10 minutes.

Add the eggplant cut into cubes and cook, stirring, for another 5 minutes.

Add the pepper cut into strips, tomato cut into wedges, minced garlic, and tomato paste. Simmer the vegetables for 2-3 minutes.

Then add chickpeas, beans (I add them without thawing), salt and spices to taste.

Mix and heat everything together for a few minutes.

Then pour in boiling water (the water should just cover the meat with vegetables), season with salt, bring to a boil, reduce the heat to minimum, cover the pot with a lid, and simmer for 1.5 hours.

While the meat and vegetables are cooking, boil the noodles in salted water and season them with oil.

We serve the ready-made lagman as follows. Place the desired amount of noodles on a plate and top with the sauce made from stewed vegetables and meat. If desired, sprinkle the dish with fresh herbs.
