
Kystybai with potatoes and onions

Finely chop the onion. Thoroughly rinse the green onion and also finely chop it. Fry all the onions in vegetable oil until golden brown.

Mix the onion with the mashed potatoes. Now prepare the dough: sift the flour, add salt and 2 tbsp of vegetable oil, pour in boiling water and mix quickly. After a minute, knead the dough. Cover the dough with plastic wrap and let it rest for 25 minutes.

Divide the dough into small pieces and roll them out into flatbreads (prick a few times to prevent puffing during frying). Fry the flatbreads on a dry skillet, cooking both sides. Then brush the hot flatbread with melted butter, spread the filling on one side, and fold the other side over it.
