
Kystybai with potatoes
Description
Traditional flatbreads are quite simple to prepare and delicious both hot and cold. Kystybai are filled not only with mashed potatoes, but also with porridges or stews. Fill and fold kystybai immediately after cooking, otherwise they may break. The baked goods are ready. Serve at the table.

Prepare all the necessary ingredients for making kystyby with potatoes.

Peel the potatoes, rinse them, and boil in salted water until cooked. Drain the water completely and mash into a puree.

Add 20 grams of butter to the mashed potatoes and mix.

Peel the onion and finely chop it. Heat vegetable oil in a frying pan and sauté the onion for 5–7 minutes until soft. Add the sautéed onion to the mashed potatoes and mix well.

Pour water into a bowl, crack in the egg, add salt, and mix until uniform.

Add the flour and knead a soft dough.

Cover the bowl with the dough and let it sit on the kitchen counter for 20 minutes.

Roll out the dough on a lightly floured surface into a thin layer. Cut out circles 14-15 centimeters in diameter from the dough.

Heat a skillet over medium heat and fry the pancakes on both sides until golden brown.

Melt the remaining butter and brush both sides of the cooked flatbread with it.

Place the filling on one half of the hot, greased flatbread.

Fold the pancake in half, enclosing the potato filling.

Bake all the flatbreads this way, prepare the kystybai, and serve immediately at the table.
