Add a pinch of salt, flour, and baking powder to the egg-and-sour cream mixture, gradually folding them into the batter.

Knead the dough by hand; knead until your hands are clean—that is, until the dough stops sticking to your hands. Put the dough in a bag and let it rest for about 20 minutes.

Add the fried onions to the potatoes.

Pour hot milk into the purée. Add it gradually until you reach the desired consistency. The purée should not be too thin.

Add butter to the mashed potatoes and stir it in.
- 10
Step 10

Divide the dough into 12 equal portions and roll each into a ball.
- 11

Pan-fry the sochniki on both sides in a hot frying pan without oil.
- 13

After frying, brush each piece with melted butter.

Spread the potato filling on one half of the pastry, fold in half.
