
Kystybai with kefir
Description
Here is a simple recipe for kystybya made with kefir. Kystybya is often prepared with milk or sour cream, but I made it with kefir. The filling is made from potatoes mashed into a puree. You can add fried onions and meat to the filling.

Place all the necessary ingredients on the table.

Peel the potatoes, wash them, cut into smaller pieces for convenience, place in a pot with water, and boil until cooked.

While the potatoes are boiling, prepare the dough. Sift the flour into a large bowl, add salt. Mix well.

Pour in the kefir.

Knead a stiff dough.

Divide the entire dough into approximately 8-10 small portions. Take one portion of the dough and roll it out on a work surface with a rolling pin into a thin round flatbread. You can use a plate to even out the edges. The diameter of my flatbread is 20 cm.

Heat a dry skillet over medium heat and place the rolled-out flatbread on the heated surface.

Fry the pancake on both sides until dark brown spots appear.

Prepare pancakes from all the dough, stacking each pancake, generously brushing with a piece of butter.

Drain the water from the cooked boiled potatoes, add salt, a piece of butter, pour in milk, and mash with a masher.

It should result in a smooth mashed potato.

Now place one flatbread on the work surface, put 2 tablespoons of purée on half of the flatbread, and spread it with a spoon into an even layer over that half.

Cover half of the pancake with mashed potatoes with the free part and do the same with all the pancakes and mashed potatoes.
