A simple way to put food by for later. These little tomatoes make a fine snack with your favorite national spirit, or slice them into wedges, toss with yellow onion, and drizzle with sunflower oil for a delicious salad. That’s why every home cook should keep a recipe for pickled green tomatoes on hand.

    To prepare this, we will need firm green cherry tomatoes of roughly the same size — like these. Of course, they need to be washed and dried.

    Cut them in a cross pattern—don’t cut all the way through so they don’t fall apart.

    Finely chop the carrots.

    Do the same with the garlic, bell pepper, and hot peppers.

    Finely chop the herbs.

    Let's prepare the brine — dissolve the salt and sugar in hot water and mix.

    Stuff the cherry tomatoes with carrot, pepper, garlic, and herbs. Pack them into a pot or bucket, alternating with bay leaves and horseradish, then cover with brine.

    The brine should completely cover them. To keep the tomatoes from floating, you can cover them with plates or lids and weigh them down with something on top — an empty small pot will do.

    After 3–4 days at room temperature, fermented green tomatoes are ready!
