Prepare all the ingredients.

For the brine, bring water to a boil with salt and peppercorns. Stir until the salt dissolves, then let cool.

Wash the zucchini and slice into rounds about 1 cm thick.

Wash the greens and pat them dry lightly. Peel the garlic and cut it in half.

Place a horseradish leaf, dill, and garlic on the bottom of a clean sterilized jar.

Fill the jar with zucchini. Pack them fairly tightly, because later they will settle and shrink in size.

Pour in the cold brine.

Leave the zucchini to ferment for 6–10 days at room temperature. The zucchini should change color, the brine should turn cloudy with a white haze on top, and a characteristic sour fermentation smell should develop. Preparation time will depend on the temperature in your home.

You can taste the zucchini to check. If they have fermented enough, drain the brine into a saucepan and bring to a boil.
