Description

Perfect for stocking up for winter. I'll go into more detail below. Jars keep for up to a year in a cool place.

    Prepare all the ingredients.

    For the brine, bring water to a boil with salt, sugar, bay leaf, and pepper. Simmer until the salt and sugar dissolve. Remove from the heat and let cool to room temperature.

    Rinse the beans well, trim the ends on both sides. Cut into 2–4 pieces. Peel the garlic cloves.

    Parboil the beans in boiling water for 3–5 minutes.

    Then immediately plunge into cold water. Then drain in a colander and let the excess water drain off.

    Rinse all the herbs and pat dry. Peel the garlic and cut the cloves in half.

    Place the beans in a glass bowl or plastic container. Add garlic cloves.

    Pour in the brine.

    Cover the top with a plate and place some weight on top. Leave for 3–5 days to ferment at room temperature. During this time the beans will change color. Check doneness by taste; how long it takes will depend on how warm your home is. Transfer the finished beans together with the brine into a glass jar or a lidded plastic container (container or bucket). Refrigerate for storage.
