
Kvass with citric acid

The drink is prepared quickly and easily. You can significantly reduce the preparation time of live-fermented kvass by adding a little citric acid to it. The recipe for this "quick" kvass is described in detail below. Can be served.

Bring the water to a boil, add dry bread kvass, remove from heat, cover with a lid, and let it steep and cool to room temperature.

Pour the kvass into a jar. During filtration, the volume of kvass may decrease; you can leave it as is or add boiled water to reach the desired volume. For a richer flavor, you can add a bit more dry bread kvass. Add sugar to taste and stir well.

Dissolve the yeast in a small amount of kvass and pour the yeast solution into a jar. Add 0.5 teaspoon of citric acid. Leave the kvass in a warm place for fermentation.
