
Kvass
Description
The drink is quick and easy to prepare. This recipe is appealing for its simplicity and use of natural ingredients. You can use this kvass to make cold soup (okroshka), bake homemade bread, or simply enjoy it to quench your thirst. For a more pronounced flavor and amber color, you can brew 2 tsp of rye malt; alternatively, if you don't like white kvass, you can toast bread crusts in the oven until dark and add them. But we don't mind the color! The result is a very tasty homemade kvass, perfect for the whole family and without any fuss! Drink up and stay healthy!

Step 1

Prepare all the ingredients. You can use any bread—rye, wheat, or a mix. The main thing is that it should be real bread. There's no need to dry it.

Crumble the bread by hand (the bread should contain only flour, yeast, and sugar).

Fill the jar (where the kvass will be) with bread so that the bottom of the jar is covered to a depth of 5-7 cm.

Add sugar to taste.

Pour warm water until it reaches the shoulders of the jar, and cover it with gauze, a porcelain saucer, or a glass lid—do not use plastic wrap, as it won't allow the mixture to breathe and the fermentation will stop. Leave it to ferment in a warm place. The speed of fermentation will depend on the air temperature. I placed my jar on the windowsill so that the sun could warm it, keeping it away from drafts.

After 1-2-3 days, check readiness by taste (this kvass can be used—but the first batch is usually not as tasty, so you can use it to marinate meat or chicken, as well as for baking).

I strain the kvass through two layers of gauze and keep the sediment for the next batch.

Transfer the grounds to a jar, filling it to a height of 5-7 cm (do not squeeze them completely dry, leaving a bit of liquid). Add sugar and a piece of bread.

Pour in warm water, cover, and place again in a warm, draft-free place.

The kvass is ready the next day.

You can keep refreshing it constantly, and when you get tired of it, you can just pour out the sediment and make it again as needed. Everything is always at hand!
