
Jerusalem artichoke kvass
Description
The drink is quick and easy to prepare. Jerusalem artichoke tubers contain quite a lot of sugar, so no additional sweetener is needed. Jerusalem artichoke kvass should be stored in a tightly sealed container in the refrigerator to stop fermentation. If you prefer a highly carbonated kvass, you can add a bit of live yeast at the very beginning, but keep in mind that such kvass may become slightly alcoholic. The drink is ready to serve.

Prepare all the necessary ingredients for making Jerusalem artichoke kvass. Thoroughly wash the vegetable with a stiff brush under hot water.

Peel the Jerusalem artichoke tubers and rinse them. Cut the vegetables into slices and place them in a clean jar.

Pour clean water into the jar.

Cover the jar loosely and place it in a warm spot for three days. Strain the finished kvass and serve immediately or chill before serving.
